Flatiron steaks are a great option for a casual dinner or a special occasion. They are tender, relatively lean, and can be cooked on the grill or in a skillet. Their strong flavor pairs well with bold sauces, such as the mustard, caper, and herb sauce in this recipe.

Ingredients:

  1. Preheat a grill to medium-high heat.

  2. In a large bowl, combine the mustard, olive oil, capers, vinegar, 1 teaspoon of brown sugar, Worcestershire sauce, and garlic. Stir everything together.

  3. Add the parsley, chives, and 2 tablespoons of water to the bowl. Season with salt and pepper. Set the caper sauce aside.

  4. Lightly coat the steaks with olive oil.

  5. In a separate bowl, mix together 2 teaspoons of salt, 1 teaspoon of pepper, and the remaining 1 teaspoon of brown sugar. Rub this mixture onto both sides of the steaks.

  6. Oil the grill grates.

  7. Grill the steaks for 3 to 5 minutes on each side, depending on their thickness, for medium-rare doneness.

  8. Remove the steaks from the grill and let them rest on a cutting board for 5 to 10 minutes.

  9. Slice the steaks against the grain and top them with some of the caper sauce. Serve the remaining caper sauce on the side.
